.6 ounces semi sweet chocolate broken in pieces
.1 stick butter diced
.1/2 cup heavy cream
put the chocolate and butter in a large heat proof bowl. set the bowl over a sauce pan of simmering hot water, making sure the bottom of the bowl does not touch the water, and heat until the chocolate and butter have melted.
remove the bowl from heat and stir the mixture until smooth. let cool for 2-3 minuets, then stir in the cream let stand at room temperature for 20- 30 minuets, then chill in the refrigerator for forty to fifty minuets, stirring occasionally, until thick enough to spread.
